RECIPE OF THE MEATBALLS WITH TOMATO-HOMEMADE GRANDMA
The meatballs homemade tomato sauce is a dish home of those of a lifetime. Dish “the grandmother”. Little introduction needs this food. The meatballs are balls of meat garnished with egg and other ingredients, which are passed through flour and fry. Usually accompanied by a sauce. INGREDIENTS for 4 people
- 500g minced meat (half beef, half pork)
- 2 cloves of garlic for the meatballs
- 3 eggs
- flour for rolling meatballs
- Salt and pepper
For the tomato sauce
- 2 cloves of garlic to the tomato sauce
- 1.5 kg of tomatoes
- Salt and black pepper
- optionally 100ml of chicken stock and thyme
- Salt and pepper
HOW TO MAKE MEATBALLS HOMEMADE SAUCE OF CRUSHED TOMATOES:
1.- Prepare the meatballs. In a bowl put the minced meat, which is better that is a mixture of pork and beef for that juicy, the garlic chopped and the eggs. Season. You can add other spices to your taste such as cumin, rosemary or thyme. Mix with the hands until a homogeneous mass.
2.- We take a small portion of the dough and give shape of pellet. The size that you want to give is something personal but, you must have the maximum size of a golf ball. After the reserve on a plate until you have finished shaping all the dough
3.- Once we have all the balls made the pass by flour. We do roll on a plate with flour, embadurnen sake of it. After we return to the dish and, once we have finished with all, we keep the dish with the meatballs in the fridge. While preparing the tomato sauce
4.- In a pan put a drizzle of oil to heat. After we add the two cloves of garlic chopped and let it brown for a minute.
5.- Once browned, add the tomato. You can add tomato dull that, since they come without skin. It’s much faster to do! If you’re using fresh tomatoes remove the skin. We add your share of salt and pepper and let cook for a few minutes, stirring constantly with a wooden spoon. Until the tomato is crushed
6.- When it has cooked a bit and have been crushed partially (you can help your crushed aplastandolo with the same spoon) optionally you can add 100ml of chicken meat. It will give you more flavor!. Let cook on a gentle heat for half an hour more, while you stir it from time to time
7.- While cooking the sauce, fry the meatballs that have been resting in the fridge. The get in plenty of very hot oil. The fry for just a minute, golden brown on the outside. This is to seal them, nothing more. In fact on the inside will remain raw. Once fried put them on absorbent paper
8.- Once fried, the meatballs and the tomato sauce has been 30 minutes cocinandose, just add 1/2 teaspoon of thyme (optional also) and enter in the sauce and the meatballs. Stir with a spoon to moisten it well in the sauce and let cook for 5 minutes more.
