These cheese-filled gnocchi are a delicious version of potato gnocchi.
These are the perfect dish for those people who are gluten intolerant or simply looking for a different and delicious potato-based dish.
Ingredients for gnocchi stuffed with cheese with Neapolitan sauce:
- 1 Kg of potato.
- 300 grs. of flour.
- 1 Egg.
- 1 teaspoon of baking powder.
- 150 grs. grated Parmesan cheese.
- 500 grs. of hard cheese or mozzarella.
- Sal.
- Pepper.
For Neapolitan sauce:
- 1 Onion.
- 2 Garlic teeth.
- 8 or 10 fresh basil leaves.
- 1 can of tomatoes.
- 2 Sugar pots.
- Olive oil.
- Sal.
- Pepper.
Preparation for Gnocchi stuffed with cheese with Neapolitan sauce:
For Neapolitan sauce:
- We cut the onion and garlic into small squares.
- We put a frying pan on the fire with a little oil and when it is very hot we add the onion, the garlic and let them take on a light golden color.
- We add the tomato sauce, fresh chopped basil, a little salt, a pinch of sugar, and let it boil a little.
For the gnocchi:
- Place a pot on the fire with plenty of water, add the potatoes, a little salt and cook until soft.
- We remove from the fire and puree with the potatoes. Let it cool.
- In a container we put the puree, add the slightly beaten egg, baking powder, two handfuls of grated cheese, salt and pepper. Mix all the ingredients until they form a dough.
- We cut the cheese into small squares and reserved.
- We take a little of the potato dough, crush it a little and put a cheese cube in the center, close as if it were a pie, and with the help of our hands we give it a round shape. We repeat this step until we finish with the dough.
- We see arranging the gnocchi on a tray sprinkled with flour.
- We put a pot of water to boil with a little salt and we cook the gnocchi. They will be ready when they float on the surface.
