INGREDIENTS for 4 people:
- 5 courgettes
- 2 eggs
- 2 cloves of garlic
- 1/2 onion
- 30g bread crumbs
- chopped parsley
- 1/2 teaspoon ground cumin
- Flour
- Oil
RECIPE OF THE MEATBALLS OUT OF ZUCCHINI:
1.- Grate the zucchini, with the peel included.
2.- We introduce this zest within a clean cloth. The locked well within the same, and we press. In the end, what you want is to lose the largest possible amount of water they contain.
3.- Put the zucchini because of no water in a bowl. Add the garlic cloves, the onion and the parsley finely chopped. In addition, we add the eggs, bread crumbs and cumin, mix all the ingredients with your hands until a homogeneous mass. If you see that you have been too “liquid” to shape them after, you can add a little more bread crumbs.
4.- We form small balls the size of a ping pong ball with the dough. The pass through flour and fry in plenty of oil. The idea is to fry enough so that the outer layer is golden brown, without allowing it to penetrate too much heat in its interior. That is to say that it will be a frying short but high temperature.
5.- Remove and place on absorbent paper.
