RECIPE OF THE AVOCADO WITH PRAWNS
The avocado stuffed shrimp or shrimp, is a kind of salad, but unlike the latter, is made on the same shell of the avocado. It is very refreshing and very tasty. We will only need a small handful of ingredients to make it and we can have it ready very quickly. In addition to all this, you will not have to light the fire for cooking (except that the prawns are not cooked. In which case we should cook them and allow them to cool previously). Let’s look at the ingredients and how to make these avocado stuffed shrimp
INGREDIENTS to make 6 halves:
- 4 avocados, medium and mature
- 400g of prawns cooked
- Olive oil, vinegar and salt
- Optionally, 1/2 tomato
HOW TO MAKE THE AVOCADO STUFFED SHRIMP
1.- The first thing is to cut the vegetables. Peel and chop the onion and chop also the tomato (without peel, the better. Although if you don’t like it you can peel it). Put it in a dish
2.- We do the same with the prawns. Peel and chop, reserving 12 of them, that we’re not going to sting because we will place it at the end. The prawns that we have chopped we put them next to the vegetable
3.- This is done cut the avocados in half. We removed the nugget inside and extract all the pulp, taking care not to break the shell. Reserve the pulp next to the shrimp and the vegetables. We leave this to the end because the avocado oxidizes very quickly, getting a dark color
4.- Dress to taste. We take a pinch of salt, a chorrete of olive oil, and a splash of vinegar. The vinegar will keep the avocado, preventing it from rusting so quick. But still, this is a recipe that will not endure more than a few hours in the fridge. Mix well all the ingredients until a homogeneous mixture
5.- We fill generously all the avocados with this mixture. We are going to make shells so, fill out those that have become more whole. 4 avocados will give us to rellentar between 6 and 7 halves of shells, depending on how much you take to each half.
6.- Fact this, we put two prawns on top of each half and reserve in the fridge for an hour, before eating. Oh to be as cool as possible!
And so easy you’ll have your avocados stuffed shrimp. Good dish to eat on those days of chicharrina summer. They are very rich!
